Vegan Creamsicle Ice Cream

Who doesn't love the tangy-sweetness of a fresh orange? Creamsicles always did it for me as a kid, but as a health conscious adult I want a more real flavour without all the added sugar. 

I whipped up a batch of my Creamsicle Body Butter last week, and have been slathering myself with it ever since. I decided I should try my hand at making a healthy version of a Creamsicle to satisfy my taste buds as well.

This recipe was hubby and kid approved, and I am not ashamed to admit - I ate most of it myself. I hope you enjoy this early taste of summer. 

What's in it:

3 oranges (remove the pith and skin, and cut into chunks. Freeze until solid.

1 can coconut milk (we will be using the coconut cream) 

1-3 tsp agave (or to taste)

2 tsp vanilla extract

Mint (optional for garnish)


 For the coconut creram: be sure when you shake it the can, you don't hear liquid, that is how you know the coconut cream has separated from the water. 

Put oranges and coconut cream into your food processor and blend. Add vanilla and agave to taste. 

Once mixture is smooth, put it back in the freezer for about an hour, remove and stir.

Portion into small bowls and garnish with mint.

Voila! Vegan Creamsicle Ice Cream.
